What to Serve with Potato Latkes
Some people would consider the traditional Chanukah side-dish, potato latkes (potato pancakes), a perfectly filling main course. But, I like a little protein to go with my carbs. This recipe for Moroccan Chicken will bring a delightful, tangy-sweetness to your holiday table, and a perfect pairing for those crispy latkes!*
Ingredients
- 2 lbs. chicken strips, diced
- 1 head cauliflower, chopped
- 1 onion, diced
- 1 can garbanzo beans, drained
- 1/4 cup golden raisins
- 2 15oz. cans diced tomatoes
- 2 Tbsp. tomato paste
- 1-2 cups orange juice
- 2 Tbsp. dried ginger
- Optional: Add 2 tablespoons of peanut butter for a Thai-like version
Preparation
- Place all ingredients in a slow cooker.
- Cook 6-8 hours.
Serve over rice.
When serving chicken or other non-fish meats, be sure to omit sour cream (and other dairy items) on your table if you're keeping Kosher.
